Ryohin Keikaku Co., Ltd., which develops MUJI, has collaborated with Dari K Inc., which develops the chocolate brand ‘dari K,’ to release 3 types of chocolate confectionery that make use of lime-fermented cacao for a limited seasonal period and available online and at selected MUJI stores only in Japan.
dari K is a chocolate brand from Japan, and is also a sustainable cocoa producer and fermenter with its production based in Sulawesi, Indonesia. ‘dari k’ sustainable practices by sourcing from local farmers and utilising sustainable land, energy and water also align with Ryohin Keikaku’s business practices.
The lime-fermented cacao, with its unique fruity flavor, is used in the 3 new products. It is made by adding lime during the fermentation process, which allows the natural citrus acidity and refreshing flavor of the cacao itself to be felt without adding fruit juice or flavorings during the chocolate manufacturing process. In order to make the most of the flavor derived from lime fermentation, it focused on the roasting method and composition of the cacao, and developed 3 new variants of the product which includes chocolate, chocolate-covered cashew nuts, and chocolate sandwich cookies.
A launch event was also held at 2 MUJI stores in Tokyo and Osaka where invitees had the opportunity to compare the new chocolates and experience the difference in taste after fermentation. This is also the first ever chocolate-focused experiential pop-up event organised by MUJI.
