Arla Foods Ingredients has successfully developed fermented beverages that are high in protein while maintaining the product clarity – a new innovation in the healthy beverage space.
As evidenced by the continued popularity of kombucha, drinking yogurt and clear protein drinks, there is a high demand for novel ready-to-drink products. Recent innovations include fermented protein drinks, a solution that can deliver multiple health benefits as the protein supports the growth and activity of probiotics.
Based on the 100% whey-based hydrolyzates Lacprodan ® HYDRO.365 and Nutrilac ® FO-8571, the solution opens up new avenues for fermented protein drinks. Because of its ability to minimise clouding and sedimentation, it can be used to create high-protein fermented beverages that are as clear as protein-free alternatives.
Manufacturers can use it with thermophilic cultures to create fermented beverages, or with mesophilic cultures to create kombucha beverages, both of which contain high levels of probiotics—a key to satisfying consumer demand – and lactose free. And, interesting all of these can be produced on the standard yogurt processing production line.
