
Across Asia Pacific, consumers are treating themselves differently. Instead of splurging on luxury desserts, they’re looking for everyday bakery products that feel premium without the premium price tag. It’s what many now call affordable indulgence.
This is reflected in new product launches too. According to Mintel GNPD, bakery products featuring butter ingredients in APAC grew by 24% year-on-year (June 2024–May 2025 vs. June 2025–May 2026). Consumers continue to associate butter with quality because it brings the rich aroma, creamy mouthfeel and authentic taste they expect from an indulgent bakery product.
For manufacturers, though, that’s where the balancing act begins. Butter prices remain volatile, making it increasingly challenging to deliver a premium eating experience while keeping products commercially competitive.
The Formulation Challenge
One common approach is to replace part of the butter with margarine or other bakery fats. From a processing and cost perspective, it makes perfect sense.
The downside is what happens to the eating experience.
As the usage of butter decreases, the product can lose its richness. The buttery aroma becomes fainter, the mouthfeel less creamy, and the overall taste less satisfying. Depending on the fat system, off notes such as rancid oil may also become more noticeable.
Creating a butter flavor that survives industrial baking adds another layer of complexity. Industrial baking is unforgiving. High temperatures can reduce flavor intensity, making it difficult to maintain a consistent buttery profile from oven to shelf.
